fall recipes

not only am i excited for fall clothes, i'm also looking forward to getting back in the kitchen and creating dishes that warm the belly. here are two recipes that i have tried recently (yes, even in the 90 degree heat) that turned out amazing!

the cilantro makes this spicy white chicken chili

best thing about these recipes... they are low calorie! i suggest doubling the recipes and freezing the leftovers for quick weekday dinners. yummy!

easy, go-to recipe

with literally 10 minutes to search for a recipe with ryan's stipulation of "something chicken" i came across these...

they were seriously so good. i added some extra seasonings like coriander and cumin, also used extra lime juice and cilantro. i will definitely make these babies again. if you decide to try them let me know what you think!

new dinner recipe!

it is supposed to be a side dish but i added shredded chicken to it to make it a main dish. it was so so good and really easy to make! i will make it again for sure, maybe next time i'll add some flank steak!

new recipe, tortellini salad

i haven't posted a recipe for awhile and i thought this one was worthy. although it doesn't have a picture (i love the pictures) it really is fantastic! it will be a great recipe for spring/summer bbq's. i will be making it again for sure.

and if you haven't searched that website before i highly recommend it. not only are the recipes all low cal they are packed with flavor!

best fritatta ever

this is a little late... i made this fritatta for ryan and i about a month ago. it was the first time i had ever made one, and i was really impressed with the way it turned out. the recipe is from rachael ray, who is not one of my favorites but it sounded amazing. i added some mushrooms to it because we had some in the fridge.
we also put some fresh basil on the top from our aerogarden. if you need a great recipe for over night guests i highly recommend this. it's super easy and extremely tasty! all you need is some mimosas, which were part of this meal as well. my new twist on mimosas, use watermelon juice instead of OJ. it is so light and delish. it is 9am... i am at work... but i could go for one right about now  ;)

my evening plans...

im so excited for this evening, such big plans. im finally starting my aerogarden! it's been sitting in my apartment staring at me... well finally tonight is the night. can not wait to have fresh herbs through out the winter. especially since this time of year is my fav to be in the kitchen.

i will also be making some more jewelry. i got some new supplies the other night from my aunt and her antique shop. AND yet another reason to be excited, im meeting my sister's boyfriend for the first time. they are coming over for leftovers... i made a HUGE batch of pasta and meatballs last night. can not wait, yay!

cold weather cooking

fall and winter make me want to get back into the kitchen. summertime is too hot to be in front of the stove... plus i would rather be drinking in the beer garden at the brown lantern ;)

i've never made a stew before and saw giada making this one day. looks so easy and really yummy.
then i saw this lovely picture on the sunset magazine website... recipe here.

and what better to finish either of these off with? something pumpkin of course, 'tis the season! these come from paula deen. and can you believe it, the pumpkin bars DO NOT have butter in them. shocker! i guess there is oil, but paula manages to add butter to everything.

i am very excited to be going down to seattle to stay with my sister for a fun filled weekend. i want to hit up forever to get some summery stuff. we will also be going to kingfish for some brunch on sunday. the biggest plans for the weekend... seeing death cab at marymoor park, could not be more excited!
since sunni is moving back to town i was thinking of making her a final dinner at her apartment. this is her favorite meal that i make so i was thinkin bout surprisin her! i do change it up a bit and add some italian sausage. giada made it as a side but i wanted to make it more of a meal.
